Breakfast Egg Bites: The High-Protein, Grab-and-Go Recipe Every Busy Morning Needs
If you’ve ever raced out the door hoping coffee counts as breakfast (we’ve all been there), you know how tough it can be to eat well when life gets busy. At AIM Fitness, we’re big believers that your first meal of the day shouldn’t be skipped—or stressful. It should be simple, energizing, and aligned with your goals.
Enter: Breakfast Egg Bites.
They’re protein-packed, meal-prep friendly, and customizable to fit your nutrition plan. Whether you’re focused on weight loss, building lean muscle, supporting GLP-1 medication, or just trying to get more whole foods into your morning, these little bites are a game-changer.
And the best part? They taste amazing.
Why Egg Bites Work for Your Goals
Eggs are one of the most nutrient-dense foods you can add to your morning routine. They deliver:
High-quality protein to keep you full longer
B vitamins for energy
Healthy fats for brain function
Versatility to pair with veggies, lean meats, or herbs you already have at home
They’re portion-controlled, easy to grab on the go, and reheat beautifully—making them perfect for meal preppers, early risers, busy parents, and anyone in the AIM community who’s living that All-In Mentality.
AIM-Approved Breakfast Egg Bites Recipe
Ingredients (Makes 12 Bites)
8 large eggs
¼ cup cottage cheese (adds moisture + extra protein)
¼ cup shredded cheddar or mozzarella
½ cup diced bell pepper
½ cup chopped spinach
¼ cup diced cooked turkey bacon or chicken sausage (optional)
Salt & pepper, to taste
Nonstick cooking spray or silicone muffin liners
Instructions
1. Preheat & Prep
Preheat your oven to 350°F.
Spray a muffin tin with nonstick spray or line with silicone cups (recommended for easy removal).
2. Blend Your Base
In a blender or mixing bowl, whisk together:
✔️ eggs
✔️ cottage cheese
✔️ shredded cheese
✔️ salt & pepper
This step gives your egg bites that smooth, Starbucks-style texture.
3. Add Your Mix-Ins
Divide the bell peppers, spinach, and turkey bacon evenly into the muffin cups.
4. Pour the Egg Mixture
Fill each cup about ¾ full with the egg mixture.
5. Bake
Bake for 18–22 minutes until set in the center and lightly golden around the edges.
6. Cool & Store
Let the bites cool before removing. Store in an airtight container in the fridge for up to 5 days—or freeze for up to 2 months.
Reheat Tip: Microwave for 20–30 seconds and enjoy!
